Vegan Eggs Substitutes

Eggs For Vegans

For many years, vegans have been using mashed bananas and ground flaxseed with water as egg substitutes in baking. When it comes to vegan egg substitutes, the most common items are arrowroot, chickpea flour, soy protein powder, corn starch, silken tofu, and applesauce.

The primary benefit of fake eggs for vegans is their plant-based properties as well as resemblance in structure and taste of regular eggs. For instance, vegan eggs use algal flour, which contains algae protein that can scramble like a normal egg.

Are Vegan Eggs Healthy?

Research shows that regular eggs have added nutrients and minerals, such as vitamin B12, vitamin D, choline, zeaxanthin, lutein, and other antioxidants. Although many vegans pursue protein in the plant-based eggs, vitamins and antioxidants in vegan eggs play a key role in eye health, energy, pregnancy, brain cognition, as well as bone and muscle health.

Many people have concerns about vegan eggs in terms of ingredients, which include canola oil, protein isolate, potassium citrate, natural flavors, and soy lecithin. Although these ingredients are not bad for vegans, some people say the list is complicated, particularly when one attempts to eat whole foods.

Whole algal flour is the primary ingredient of most fake eggs for vegans. It is a mixture of sucrose, fat, protein, ash, and fiber – all these ingredients come from the algae origin. The manufacturing process involves harvesting and fermenting of Chlorella Protothecoides, which is a microalga.

The manufacturing company then initiates the pasteurization process to inactivate these cells and separate them from the culture broth. Next, they adjust the pH to neutral using sodium hydroxide or potassium hydroxide. Here, the staff adds food-grade antioxidants and other plant-based minerals to the eggs. So, in general, plant-based or vegan eggs are safe and healthy to consume.
